When you're craving a satisfying meal that's bursting with flavor, this Sweet Potato and Black Bean Salad fits the bill perfectly. Loaded with the goodness of sweet potatoes, black beans, and fresh vegetables, this salad is not only quick to make but also incredibly nourishing.

Ingredients:

  • 2 medium sweet potatoes, peeled and cubed
  • 1 can black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1/4 cup chopped cilantro
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, toss the sweet potato cubes with a drizzle of olive oil, salt, and pepper.
  3. Roast the sweet potatoes in the preheated oven for about 20-25 minutes, or until they are tender and slightly caramelized.
